The Sourcing Journey
Great coffee cannot be faked, and it all starts at the farm level. We partnered directly with a cooperative of small-batch farmers in the high-altitude regions of Colombia. Grown in mineral-rich volcanic soil at over 1,500 meters above sea level, these beans mature slowly, allowing them to develop an incredibly dense, sweet, and complex cellular structure. By utilizing direct-trade practices, we ensure that the farmers are paid significantly above fair-trade minimums, allowing them to reinvest in sustainable agricultural practices and support their local communities.
The Art of the Roast
Once the green coffee arrives at our local roasting facility, our master roasters take over. We roast our signature house blend in small, 10-kilogram batches. This allows for meticulous temperature control. We utilize a medium-dark roast profile that perfectly balances the bright, natural acidity of the Colombian beans with the deep, caramelized sugars developed during the Maillard reaction. The result is a bean that is bursting with oils, yet never tastes burnt or overly bitter.
The Extraction Science
In the cafe, our baristas treat every single shot like a scientific experiment. Using precision grinders, we dose exactly 18.5 grams of coffee into the portafilter. The grounds are leveled and tamped with exact pressure before being locked into our state-of-the-art Italian espresso machine. We extract the shot using 9 bars of pressure and water heated to precisely 201°F. The 25-second extraction yields a beautiful, thick layer of hazelnut-colored crema that traps the aromatic oils inside the cup.
