The secret to a perfect croissant lies in a technique called lamination. We start with a cool, elastic dough made from high-protein flour and a touch of local honey. We then encase a massive block of premium, high-fat European butter inside the dough. Through a series of careful rolling and folding, we create exactly 81 microscopic layers of alternating butter and dough. When this hits the hot oven, the water in the butter evaporates, creating steam that pushes the layers apart, resulting in the gorgeous, airy honeycomb structure you see when you tear it open.
Why European Butter Matters
We import our butter specifically for this pastry. Standard American butter contains more water and less milk fat, which can lead to a dense, tough pastry. Our European-style butter boasts an 84% butterfat content. This higher fat content not only provides that unmistakable, rich, lingering flavor but also makes the dough significantly more pliable during the lamination process, ensuring perfectly defined layers.
